All of our breads and for the most part our pastries are made of organic flour sourced locally in Graham, North Carolina. They contain no preservatives or commercial yeast, but are produced instead using levain, which is a fermented mixture of flour and water. This handmade, sourdough starter contains a colony of microorganisms including wild yeast and lactobacilli.
